Barba is a long, thin pasta shape that is rolled into nests before drying. Fabbri's is made from 100% organic, ancient, Tuscan grains (Cappelli, Khorasan and/or other ancient varieties).

The Fabbri family has been making artisanal pasta for 5 generations, since 1893. Over their long history, they've continued to make their pasta exactly the same way in their factory in Chianti, Italy. 
 
They begin by sourcing 100% of their grains from organic Italian farms. Temperature control is a key element of their pasta-making process: The grains are milled at low temperatures, and the kneading also takes place at a cooler temperature to avoid damaging the gluten and altering the nutritional properties of the wheat kernels.
 
To knead, grind, and press all of their shapes, they use the same machine their grandfather Renzo purchased in 1958. The machine is fitted with bronze dies, which produce a rougher and more porous pasta that absorbs 30% more sauce. Once extruded, the pasta is slowly dried, also at a low temperature, to ensure the best texture.
